Creamy, thick and full of richness of nuts and saffron with a hint of cardamom, this heavenly delicacy is sure to please your taste buds. Shahi Kulfi is a traditional ice cream recipe passed on from the Mughal kitchen. It makes a perfect dessert during festivals and a favourite of all age groups. You can use Kulfi moulds to make popsicles (that will be really fun! 😉 ) or if you don’t have kulfi moulds then you can simply freeze the ice cream in any freezer safe container and can serve the way you want!
Here is what you will need to make Shahi Kulfi:
1 litre Full Cream Milk
400 gms Condensed Milk
1 cup Powdered Milk
1/2 cup Sugar
1/2 teaspoon Saffron Strands
1/2 teaspoon Cardamom Powder
1/2 cup Slivered Almonds and Pistachios (Roasted)
1.Put all the ingredients (except cardamom powder and almonds/pistachios) in a heavy bottomed pan and whisk together.
2. Cook on medium to low flame till the milk reduces to one third of it’s volume with stirring frequently to avoid burning and lumps formation.
3. Turn off the fire and let it cool completely at room temperature.
4. Mix in cardamom powder and almonds/pistachio and pour the mixture in a freezer-safe container and freeze till firm.
5. Scoop out or cut into desired shapes and serve!
